Celebrate National Strawberry

February 27 is National Strawberry Day.

(These two oven dishes can be prepared and served in tandem as they share a common cooking temperature. Serves 4 to 6.)
Tassleberry Farm Strawberry
Marinade Roasted Vegetables
Ingredients
• 5 lbs. new potatoes
• 2 large sweet potatoes
• 12 oz. btl. Tassleberry Farm Strawberry Marinade
• 3 zucchinis
• 1 onion
• 2 lbs. carrots
• 1 package dry onion soup mix
• ¼ cup olive oil
Directions
Grease bottom of ample-sized oven pan with the olive oil
Chop new potatoes, sweet potatoes, onion, zucchini, and carrots into small chunks.           
Place all the vegetables in the pan  
Add 1 jar of Tassleberry Farm Strawberry Marinade and 1 package of dry onion soup mix into the stir into the pan
Roast in a preheated 375-degree oven covered in foil for at least 55 minutes and uncovered for 5-10 minutes.
Tassleberry Farm Strawberry
 Jerk Chicken From The Oven
Ingredients
• 6 chicken legs
• ¼ cup of Tassleberry Farm Strawberry Vinegar
• 1 cup of Tassleberry Farm Strawberry Jerk Marinade
Directions

Place legs in a bowl (with a cover) and douse with Tassleberry Farm Strawberry Vinegar. Use covered bowl to facilitate mixing, then let sit for several minutes
Rinse legs off with warm water, then using a fork, pierce the meat of the legs
Place chicken back in bowl drained of vinegar, pour on Tassleberry Farm Strawberry Marinade, cover bowl and shake it up to spread marinade
Place chicken in large baking pan, leaving spaces in between. Cover with tinfoil, tightly crimped (or plastic wrap), and place in fridge for at least 2 hours
Remove pan from fridge, remove foil from pan and place into preheated 375-degree oven. Bake for 75-80 minutes, then turn on broiler for 5 minutes to brown chicken's skin
Remove from oven, serve with roasted vegetables and rice.
