Cinco de Mayo, a day to celebrate Mexican culture, is more popular in United States than in Mexico.
When the Mexican army triumphed over French military forces in the Battle of Puebla on May 5, 1862, an American Civil War holiday, strangely enough, was first marked by Latinos living in California. Mexican-Americans today use the occasion for a celebration of food and cerveza, mariachi music and dancing.

Cinco de Mayo is celebrated heartily in the southeastern Mexican state of Puebla, but mostly it is marked in America, much like St. Patrick's Day celebrates the Irish and Chinese New Year brings fireworks and general revelry to Asian communities in America.

Moms Tassleberry never wants a holiday to go to waste, so today she's sharing several salsa-themed Cinco de Mayo recipes with chefs interested in the tradition.
The recipes below employ both Tassleberry Farm Strawberry and Sweet Corn Salsa and Tassleberry Farm Blueberry and Sweet Corn Salsa in their preparations.
Our salsas are tasty all-natural mixtures of our farm-grown sweet corn and strawberry or blueberry vinegars added to fresh peppers, tomatoes, onions, cilantro, salt and sugar. Both flavors come mild or hot, according to taste.
Low in cholesterol, fat and calories (just 4-5 per tablespoon), salsa is high in vitamins A, B6 and C and proves itself a good source of iron, magnesium and potassium and beta carotene.
Strawberries are high in antioxidants and vitamin C, provide some dietary fiber, and are known to fight heart disease and provide a number of vitamins and minerals that support overall health.
Blueberries are perhaps the most powerful berry in terms of antioxidant content. High in flavonoids, they are known to help protect against prostate cancer, urinary tract infections and cataracts. They are also known to fight brain damage from strokes and heart disease.

Tassleberry Farm Strawberry and
Sweet Corn Salsa Macaroni & Cheese

Ingredients
• 1 cup of elbow macaroni
• 12-oz. btl. of Tassleberry Farm Strawberry & Sweet Corn Salsa (mild or hot, to taste)
• 14.5 ounce can of un-drained whole tomatoes
• 1 cup shredded cheddar cheese
Directions
Cook macaroni as desired
Heat tomatoes and Tassleberry Farm Strawberry & Sweet Corn Salsa in a 2-quart pan, medium heat, breaking up tomatoes
Reduce heat to low and simmer uncovered 5 minutes
Stir in macaroni and add cheese
Cover and let stand 5 minutes

Sweet Corn Salsa Baked Chicken

Ingredients
• 1 small chicken
• 12-oz. btl. of Tassleberry Farm Blueberry & Sweet Corn Salsa (mild or hot, to taste)
Directions
Preheat oven to 350
Cut up a small chicken, bone in and remove skin
Arrange chicken pieces in a baking dish.
Pour 12-oz. jar of Tassleberry Farm Blueberry & Sweet Corn Salsa over the chicken to cover. Cover baking dish with foil.
Bake for about 1 hour, removing foil for last 10 minutes
