Summer Strawberry Delights

Tassleberry Farm's Strawberry Balsamic Vinegar is the perfect compliment for the juicy strawberries just harvested, melding a tangy tartness to the sweetness of the berries.
To take advantage of the fine form this strawberry crop is showing, Moms Tassleberry has several simple-yet-delicious recipes to share with her loyal customers to make their summer just that much sweeter:


Tassleberry Farm Strawberry
Walnut Spinach Salad

Ingredients
• 1 bag baby spinach leaves
• 2 cups fresh strawberries
• 1/4 cup walnuts
• 1/2 cup crumbled goat cheese
• 2 tbsp Tassleberry Farm Strawberry Balsamic Vinegar
• 1/2 cup olive oil
Directions

Wash and hull fresh strawberries, removing stems and leaves, then chop up
Wash baby spinach leaves and place in bowl with cover
Pour in Tassleberry Farm Strawberry Balsamic Vinegar and olive oil. Cover bowl and vigorously toss
Add in fresh strawberries and walnuts. Cover again and gently toss
Top with crumbled goat cheese and serve

Optional - To spice up salad to taste, sprinkle in some black pepper, or a finely chopped clove of garlic, or some diced-up onion or scallions when adding in strawberries and walnuts. If fresh strawberries are unavailable, you may substitute well-defrosted frozen strawberries or two cans of Mandarin oranges

Summer Strawberry Surprise

Ingredients
• 1 qt. fresh strawberries
• 2 tbsp Tassleberry Farm Strawberry Balsamic Vinegar
• 2 tspn sugar
Directions
Wash and hull fresh strawberries, removing stems and leaves, then slice in half
Place in bowl with cover
Drizzle 1 tbsp Tassleberry Farm Strawberry Balsamic Vinegar over strawberries
Sprinkle 1 tspn of sugar over top of strawberries
Cover bowl and gently but repeatedly toss to coat strawberries
Place bowl in refrigerator for about 30 minutes then serve
Optional - Lightly sprinkle with black pepper or garnish with mint sprigs
