During this Christian season of Lent, Moms Tassleberry has agreed to help out harried homemakers with easy-to-prepare, always healthy fish recipes for quick, savory Friday night meals after a long week.
This week Moms suggests you enjoy some broiled swordfish. Check this page each Thursday for that week's suggestion.

The recipe below employs Tassleberry Farm Strawberry Jamaican Jerk Marinade in its preparation.
The best flavors of island jerk seasoning, clove, allspice and a little heat, are the perfect complement to the sweetness of strawberries in our Tassleberry Farm Strawberry Jamaican Jerk Marinade. It's great with fish and if you desire a more sunny Caribbean flavor blend in some orange or pineapple juice.
Strawberries are high in antioxidants and vitamin C, provide some dietary fiber, and are known to fight heart disease and provide a number of vitamins and minerals that support overall health.
Swordfish is a good source of vitamins B6 and B12, Omega 3 fatty acids, Niacin, Phosphorus and Selenium. With zero carbs, swordfish has plenty of protein with four ounces providing over 50 percent of what one needs daily. On the flip side, this fatty fish fills 20 percent of one's healthy daily cholesterol allowance.

(Serves 4)
Ingredients
• 1 lb. swordfish steaks, boned, about 1 inch thick
• 1 10-oz. Btl. Tassleberry Farm Strawberry Jerk Sauce
Directions
Directions
Place steaks in shallow baking pan, with space between
Coat steaks in Tassleberry Farm Strawberry Jerk Marinade, turning to coat them all over
Cover and let stand for 30 minutes at room temperature, turning once
Preheat broiler and cover oven rack with tinfoil
Broil steaks 4 inches from heat for 8 minutes
Turn steaks, baste with some of remainder marinade from baking dish
Cook until fish flakes easily with fork (7-10 minutes)
Serve over rice with choice of vegetable
Optional: Garnish with parsley and lemon wedges
