Moms Tassleberry continues with her series of easy-to-prepare Fish Friday recipes for the season of Lent, helping harried homemakers with always healthy fish dishes for quick, savory meals as another long week comes to a close.
This week, Moms suggests you partake of some baked halibut, beloved during Lent by parents with picky children for its non-fishy taste.

 A perfect compliment for seafood, our marinade combines sweet strawberries and tangy strawberry vinegar with savory onions and seasonings. Also great as a basting sauce, it was chosen by the online journal The Nibble as a Best Barbecue Sauce.
Our salsa is a tasty all-natural mixture of our farm-grown sweet corn and strawberry vinegar added to fresh peppers, tomatoes, onions, cilantro, salt and sugar. It comes mild or hot, according to taste.
Low in cholesterol, fat and calories (just 4-5 per tablespoon), salsa is high in vitamins A, B6 and C and proves itself a good source of iron, magnesium and potassium and beta carotene.
Strawberries are high in antioxidants and vitamin C, provide some dietary fiber, and are known to fight heart disease and provide a number of vitamins and minerals that support overall health.
Lower in sodium than other fish, halibut is high in potassium and is a acknowledged source of protein and "good" cholesterol. Halibut reduces the risk of and the damage from heart disease and can lower blood pressure and triglycerides or fats in the blood. It can improve symptoms of arthritis and psoriasis.
When choosing your piece of fish for this recipe, check for firmness. A firm piece of halibut will accept the marinade better and, after baking, will flake when prodded with a fork. One pound serves four, so plan accordingly.

Ingredients
1 btl. Tassleberry Farm Strawberry Marinade
• 1 lb. halibut
1 btl. Tassleberry Farm Strawberry and Sweet Corn Salsa
Directions
Preheat oven to 350
Slice fish into 4 quarters and position in baking dish with space between
Brush on Tassleberry Farm Strawberry Marinade on all sides
Place in oven and bake for 20-25 minutes, basting with marinade as needed. When done, fish should flake apart with a fork
Remove from oven, plate, then top with Tassleberry Farm Strawberry and Sweet Corn Salsa
Serve while hot with rice and your choice of vegetable
