Tacos always a fun family
favorite for Fish Fridays

Moms Tassleberry realizes Fish Fridays can be a chore for the harried homemaker.
This week she contributes her fifth in a series of easy-to-prepare healthy fish recipes for those families observing the season of Lent.

For this week's quick, savory meal, Moms suggests you whip up some codfish tacos, always a popular family favorite.
This is her fifth Fish Friday recipe following Double Strawberry Baked Halibut, Broiled Strawberry Jerked Swordfish, Blueberry Salsa Roasted Salmon and Strawberry Smothered Broiled Tuna Steaks (scroll down page to access these recipes). Check this page each Thursday for that week's suggestion.
The recipe below employs Tassleberry Farm Strawberry Marinade in its preparation and Tassleberry Farm Strawberry and Sweet Corn Salsa as a condiment.

A perfect compliment for seafood, our marinade combines sweet strawberries and tangy strawberry vinegar with savory onions and seasonings. It was chosen by the online journal The Nibble as a Best Barbecue Sauce.
Our salsa is a tasty all-natural mixture of our farm-grown sweet corn and strawberry vinegar added to fresh peppers, tomatoes, onions, cilantro, salt and sugar. It comes mild or hot, according to taste.
Low in cholesterol, fat and calories (just 4-5 per tablespoon), salsa is high in vitamins A, B6 and C and proves itself a good source of iron, magnesium and potassium and beta carotene.
Strawberries are high in antioxidants and vitamin C, provide some dietary fiber, and are known to fight heart disease and provide a number of vitamins and minerals that support overall health.
Codfish is a solid source of heart-healthy Omega-3 fatty acids and easily absorbed proteins, is low in calories with little or no carbohydrates or fat and has a high volume of of Vitamins B6 and B12. A fish-rich diet will provide one with a better cholesterol profile (high HDL, low LDL) and codfish has properties that protects your skin against sunburn and potentially skin cancer.

(Serves 4)
Ingredients
(Taco seasoning, a combination of spices which may include cumin, chili powder, oregano, garlic powder, paprika, chipotle powder and black pepper, can be mixed at home but is most easily available is supermarkets under a variety of brand names.)
1 btl. Tassleberry Farm Strawberry Marinade
• 1 lb. codfish
• 1 packet taco seasoning (or 1.25 ounce of home-mixed equivalent)
• Black olives, sliced
• 1 medium tomato, diced
• 1 cup lettuce, shredded
• Shredded Monterrey Jack cheese
• Sour cream
• 1 btl. Tassleberry Farm Strawberry and Sweet Corn Salsa
• 1 pkg. taco shells or tortillas
Directions
Place fish in large dish, coat with Tassleberry Farm Strawberry Marinade, cover and refrigerate for at least a half-hour
Take top rack from oven and cover center area with tinfoil. Place rack back in oven, slotted about 6 inches from broiler flame source
Preheat oven, broiler temp
Remove fish from dish, shaking off excess marinade. Sprinkle on taco seasoning mix to both sides and place on oven rack
Broil fish for 4 minutes a side or until it flakes with a fork
Remove fish from broiler and chop into smaller pieces. Cover with foil and set aside
Heat taco shells/tortillas according to directions
Place shredded lettuce into taco shell, add chopped fish then layer on tomatoes, olives, cheese and sour cream
Top with Tassleberry Farm Strawberry and Sweet Corn Salsa and serve
