'Buttery' scallops full of
fruit, fun for Fish Friday

As Easter weekend approaches and Lent winds down, Moms Tassleberry knows families are getting bored with fish every Friday, restless with the same old recipes and ready for something fun.
This week she contributes her sixth in a series of easy-to-prepare healthy fish recipes for those observing the season.

For this easy-to-prepare meal, Moms suggests scallops with a fruity twist. Scallops have the added benefit of a non-fishy taste, satisfying picky children and helping out harried homemakers.

 (Serves 4)
Ingredients
• ¼ cup olive Oil
• 1 lb. scallops, sliced into quarters
• ½ cup onion, chopped
• 2 tbsp. Tassleberry Farm Blueberry Vinegar
• 1 btl. Tassleberry Farm Blueberry Butter
• Ground black pepper
• Chopped parsley
Directions
Heat the olive oil in large frying pan over a moderate high heat
Add scallops and saute until clear
Remove promptly, plate and cover with foil
In same pan, without draining, add in 1 btl. Tassleberry Farm Blueberry Butter, onions, Tassleberry Farm Blueberry Vinegar and black pepper. Reduce heat to medium and blend about 5 minutes
Spoon over scallops while hot. Top with parsley.
Serve immediately with rice and vegetable of your choice
