'Buttery' scallops full of
fruit, fun for Fish Friday

As Easter weekend approaches and Lent winds down, Moms Tassleberry knows families are getting bored with fish every Friday, restless with the same old recipes and ready for something fun.
This week she contributes her sixth in a series of easy-to-prepare healthy fish recipes for those observing the season.

For this easy-to-prepare meal, Moms suggests scallops with a fruity twist. Scallops have the added benefit of a non-fishy taste, satisfying picky children and helping out harried homemakers.
This is her sixth Fish Friday recipe following Double Strawberry Baked Halibut, Broiled Strawberry Jerked Swordfish, Blueberry Salsa Roasted Salmon, Strawberry Smothered Broiled Tuna Steaks and Strawberry Codfish Tacos (scroll down page to access these recipes). Check this page each Thursday for that week's suggestion.
The recipe below employs the whole-fruit Tassleberry Farm Blueberry Butter and Tassleberry Farm Blueberry Vinegar in its preparation.

The whole-fruit butters Tassleberry Farm produces are the result of a preserving process where the fruit is blended after being heated to give it a smoother butter-like consistency. Tassleberry Farm's Blueberry Butter is all natural and made from berries handpicked in our fields with more than a pound of berries in each 10-ounce jar, along with a little sugar and some spice.
Despite the buttery name, nutrition-minded chefs will find that fruit preserves carry through on the health benefits of the fruit they are produced from.
Blueberries are high in flavonoids, protect against prostate cancer, urinary tract infections, cataracts and brain damage from strokes and heart disease.
Vinegar smooths the absorption  of its nutrients like calcium, magnesium and Vitamin C, will kill harmful stomach bacterias and help control blood sugar and insulin levels.
Heart-healthy scallops are high in protein and a great source of Vitamin B12, critical for good cardiovascular health and is a natural ally in the battle against osteoporosis. Each serving of the recipe belows supplies one-third of the daily requirement of B12. Scallops also provide Omega-3 fatty acids, along with magnesium and potassium, three nutrients also beneficial to one's cardiovascular system, easing blood flow and maintaining normal blood pressure.

A perfect compliment for seafood, our marinade combines sweet strawberries and tangy strawberry vinegar with savory onions and seasonings. Also great as a basting sauce, it was chosen by the online journal The Nibble as a Best Barbecue Sauce.
Our salsa is a tasty all-natural mixture of our farm-grown sweet corn and strawberry vinegar added to fresh peppers, tomatoes, onions, cilantro, salt and sugar. It comes mild or hot, according to taste.
Low in cholesterol, fat and calories (just 4-5 per tablespoon), salsa is high in vitamins A, B6 and C and proves itself a good source of iron, magnesium and potassium and beta carotene.
Strawberries are high in antioxidants and vitamin C, provide some dietary fiber, and are known to fight heart disease and provide a number of vitamins and minerals that support overall health.
Lower in sodium than other fish, halibut is high in potassium and is a acknowledged source of protein and "good" cholesterol. Halibut reduces the risk of and the damage from heart disease and can lower blood pressure and triglycerides or fats in the blood. It can improve symptoms of arthritis and psoriasis.
When choosing your piece of fish for this recipe, check for firmness. A firm piece of halibut will accept the marinade better and, after baking, will flake when prodded with a fork. One pound serves four, so plan accordingly.

Wednesday

A salmon feast to fast with

Fish Fridays with flavor
from Tasslebery Farm

Christians the world over are embarking on their annual journey through Lent.
It started Wednesday with the marking of the ashes and, for many church folk, rituals of fasting and prayer will continue until Holy Saturday six weeks hence, 40 days of self-denial and reflection.
Anglicans, Catholics, Coptics, Lutherans, Methodists, Presbyterians and regional Orthodox Christian sects will mark this period of sacrifice and, for many, that means no meat on Friday.

Moms Tassleberry knows that the tradition of fish on Friday is taxing to some. Tired cooks may just toss packages of frozen fish sticks and French fries onto a cookie sheet, shove it in the oven and be done with it.
Moms realizes that, even with homemade tartar sauce, the ol' fish sticks routine will grow pretty unpopular pretty quickly. So Moms will do her part by providing a easy-to-prepare fish recipe for harried homemakers for the next six Fridays. Check this page each Thursday for that week's suggestion.
The salmon recipe below employs Tassleberry Farm Blueberry and Sweet Corn Salsa in its preparation. Our salsa is a savory all-natural mixture of our farm-grown sweet corn and Blueberry Vinegar added to fresh peppers, tomatoes, onions, cilantro, salt and sugar. It comes mild or hot, according to taste.

Our salsa is also available in strawberry flavor, mild or hot.
Salmon is chock full of Omega-3 fatty acids, an essential nutrient for good health. It battles heart disease, diabetes, some cancers and arthritis, prevents blood clots and soothes inflammations.
