Roasted Lamb an Easter
Feast - Strawberry-Style

Moms Tassleberry has a unique take on your Easter lamb roast for those adventurous in their culinary tastes.
Lamb roasts are a staple for many families during this spring holiday feast, often served with mint jelly.
It was that mint jelly which got Moms thinking about a strawberry version for her holiday roast this year. Moms rushed to her kitchen, cobbled up this sweet & savory combination and is now proud to share her vision with you.
This marinade must be prepared a day in advance to assure that the lamb will absorb it.
The recipe below employs whole-fruit Tassleberry Farm Strawberry Butter and Tassleberry Farm Strawberry Marinade in its preparation.
The whole-fruit butters Tassleberry Farm produces are the result of a preserving process where the fruit is blended after being heated to give it a smoother butter-like consistency.

A perfect compliment for meats, Tassleberry Farm Strawberry Marinade combines sweet strawberries and tangy strawberry vinegar with savory onions and seasonings. It was chosen by the online journal The Nibble as a Best Barbecue Sauce.
Despite the buttery name, nutrition-minded chefs will find that fruit preserves carry through on the health benefits of the fruit they are produced from.
Strawberries are high in antioxidants and vitamin C. They are known to fight heart disease and provide a number of vitamins and minerals that support overall human health.

Ingredients
• 1 lamb roast
• 1 half-cup of onions, finely chopped
• 3 tbsps whole-fruit Tassleberry Farm Strawberry Butter
• 3 cloves of garlic, chopped into slivers
• 1 12-oz. btl. Tassleberry Farm Strawberry Marinade
• 1 cup sour cream
• 1 eighth-cup rosemary
Directions
After trimming excess fat, perforate roast all over with a paring knife and insert garlic slivers completely into holes
In large plastic sealable bag, combine Tassleberry Farm Strawberry Marinade and 3 tbsps of whole-fruit Tassleberry Farm Strawberry Butter with the chopped onion (you may add a half-cup of red cooking wine to this mix, but that is optional). Shake vigorously to blend mixture
Place roast in bag and put into refrigerator for 24 hours, turning occasionally to spread marinade
Remove roast in bag from refrigerator, let sit for approximately 30 minutes to give it chance to assume room temperature
Remove roast from bag and place in roasting pan
Split remaining marinade in half, scooping onions into one of the halves in reserve.
Place in oven preheated to 350, and cook for 25-30 minutes per pound to reach medium rare, the preferred temperature of most diners. Baste roast with reserved half of marinade with onions occasionally during cooking
As meat nears its optimal serving temp, reduce remaining marinade reserve by half in a sauce pan
Remove roast from oven
Combine sour cream with tbsps of reduced marinade, governing its viscosity, to form a drizzle.
Slice roast, drizzle mixture over platter, sprinkle on rosemary and serve.

Bread, Butter & Brie a
Solid Good Friday Option

Easter Weekend is nigh. There's only a couple of more hurdles for those observing Lent
Good Friday is a day of fasting: One full meal, although smaller than a regular meal, and two smaller meals, which together do not equal one full meal, are all Christian tradition allows. That and again, of course, no meat.

This season of Lent, Moms Tassleberry has provided six healthy easy-to-prepare fish recipes to assist harried homemakers trying to feed their families in keeping with those traditions.
This week Moms is not providing a fish dish recommendation, but recipes for dishes such as Double Strawberry Baked Halibut, Broiled Strawberry Jerked Swordfish, Blueberry Salsa Roasted Salmon, Strawberry Smothered Broiled Tuna Steaks, Strawberry Codfish Tacos and Very Berry Blueberry Buttered Scallops are available by just scrolling below.
Instead, Moms today is pitching a simple but tasty, healthy solution for one, or both, of the smaller meals allowed on Good Friday.
The recipe below employs whole-fruit Tassleberry Farm Strawberry Butter in its preparation.
The whole-fruit butters Tassleberry Farm produces are the result of a preserving process where the fruit is blended after being heated to give it a smoother butter-like consistency. Tassleberry Farm's Strawberry Butter is all natural and made from berries handpicked in our fields with more than a pound of berries in each 10-ounce jar, along with a little sugar and some spice.
Despite the buttery name, nutrition-minded chefs will find that fruit preserves carry through on the health benefits of the fruit they are produced from. Tassleberry Farm also has a whole-fruit butter in blueberry flavor
Strawberries are high in antioxidants and vitamin C. They are known to fight heart disease and provide a number of vitamins and minerals that support overall human health.
Cheese itself has health benefits, believe it or not, for something so tasty. The brie used in the recipe below is high in healthy proteins as well as calcium and phosphorus, both of which promote healthy bones and teeth. It also contains abundant vitamins A, B6 and B12. One serving provides plenty of Riboflavin, or B2, a nutrient vital to the human metabolism as well as folate, another nutrient important during pregnancies.
Choosing your bread for this sandwich is important and Moms suggest you chose a French baguette, but purchase it on the day of preparation as baguettes contain no preservatives.

Ingredients
• 1 French baguette
• 1 10-oz. btl. Tassleberry Farm Strawberry Butter
• 1 small wheel of soft brie cheese.
Directions
Slice baguette lenghthwise and hollow out the middle slightly to provide a well for the cheese and whole-fruit butter to settle into.
Breaking the rind, scoop out brie and slather onto one side of the baguette. You may find that you must warm the brie slightly in the oven to facilitate this step.
On the other side of the baguette, liberally slather the Tassleberry Farm Strawberry Butter.
Fold the two sides together and place on cookie sheet.
Preheat over to 325. Slide in baking sheet and monitor until the cheese begins bubbling out the side, usually 20-25 minutes. Make sure not to burn bread, turning if necessary
Remove from oven, wrap in tinfoil to keep it warm.
The bread can be cut into section and reheated in a microwave for later consumption

'Buttery' scallops full of
fruit, fun for Fish Friday

As Easter weekend approaches and Lent winds down, Moms Tassleberry knows families are getting bored with fish every Friday, restless with the same old recipes and ready for something fun.
This week she contributes her sixth in a series of easy-to-prepare healthy fish recipes for those observing the season.

For this easy-to-prepare meal, Moms suggests scallops with a fruity twist. Scallops have the added benefit of a non-fishy taste, satisfying picky children and helping out harried homemakers.
This is her sixth Fish Friday recipe following Double Strawberry Baked Halibut, Broiled Strawberry Jerked Swordfish, Blueberry Salsa Roasted Salmon, Strawberry Smothered Broiled Tuna Steaks and Strawberry Codfish Tacos (scroll down page to access these recipes). Check this page each Thursday for that week's suggestion.

Cherry wood spreader offer extended

Mardi Gras brings fruit-filled
treats at Tassleberry Farm

Like the first birds chirping, or the crack of bats at spring training, Mardi Gras is a harbinger of Spring.
And Moms Tassleberry loves Spring. It's almost planting season around Tassleberry Farm.

Every year when Carnival arrives, Moms whips up a treat for the celebration.
This Tuesday is Fat Tuesday, the magical culmination of the three-day ritual of riotous masquerades, constant revelry, persistent parades, strong spirits, movable feasts and fireworks, celebrated not just in New Orleans but around the world, from the Plains of Abraham in Quebec City to Sydney Harbor Down Under.
The Irish celebrate it. They call it Shrove Tuesday. The English too. For Belgians, it's the best time of year. In Italy, it's also a big deal, stretching 'til Fat Saturday. Most of Europe marks the season and in the capitals of the Caribbean it's been going on for weeks.
Moms gets up early every Fat Tuesday and pads on down to the kitchen to make her celebrated homemade doughnuts. In honor of Mardi Gras, she labels them beignets. "That's French for doughnuts," she laughs.
For Christians around the globe, Fat Tuesday ritualizes richer, fatty delights likes beignets before the long fast of Lent dawns the next day.
Mom first sampled beignets on a long ago trip to New Orleans and says she still enjoys Cajun food but leaves its cooking to the Cajuns.
"They know that world best... those spices... flavors. Hmmmmm... ", she purrs.
Smoothing out some dough with her rolling pin as the new light streams through a kitchen window, Moms peers over her glasses and quips, "And, every once in a while, the cook needs a night off too you know!"
Moms is getting in the Carnival spirit now, fondly recalling the crawfish gumbo and the jambalaya, and announces that Tassleberry Farm is extending its special Butter Kit offer another 10 days.

Peanut Butter Lover's Day Prompts
Offer From Tassleberry Farm

Tuesday, March 1 is National Peanut Butter Lover's Day and Tassleberry Farm is showing the love with a special offer in honor of the occasion.
Until March 11, we will include a free hand-carved cherry wood butter spreader with each of the first 50 orders of a Tassleberry Farm Whole-Fruit Butter Gift Kit, containing two 10 ounce bottles of your choice of strawberry or blueberry all-natural whole-fruit butters.
Now, many families consider the peanut butter & jelly sandwich "the greatest thing since sliced bread." But we at Tassleberry Farm know that adage is mis-used, because the PB&J precedes sliced bread by about 25 years, historically speaking.
Fruit has been preserved around the world for many centuries in various forms such as butters, chutney, confits, curds, jams, jellies and marmalades. All of these have regional variations and recipes depending upon the crops distilled into the preserves and methods used in preparation.
Groundbreaking African-American botanist, inventor and all-round genius George Washington Carver came up with 300-plus uses for peanuts during and after the Reconstruction Era following the American Civil War but, surprisingly, peanut butter isn't among them!
The idea for peanut butter as we know it came from St. Louis doctor Ambrose Straub who, seeking a way to get protein into the diets of elderly patients with dental problems, began his research in the 1890s and secured a patent for his peanut butter-production machine just after the turn of the last century. There is also evidence that the Mexican Aztecs enjoyed a form of peanut butter back in the Middle Ages.
Pre-sliced bread didn't come into the picture until it was packaged and sold in 1928. The first bread-slicing machine was invented by Iowa resident Otto Rohwedder and it was first marketed as "Kleen Maid Sliced Bread" by a Missouri company.
The PB&J was a big hit at the 1904 World's Fair in St. Louis. Food rationing during World War II drove the PB&J to dizzying heights of popularity due to its still-plentiful contents and today the National Peanut Board says kids average 1,500 PB&Js each before they graduate high school.
For something so popular, PB&J, believe it or not, has health benefits.
Peanut butter is a good source of protein, protects against cardiovascular disease and provides needed vitamins and minerals such as vitamins B3 and E and magnesium as well as cancer-fighting folates. It's high in fiber and contains some antioxidant properties.

Whole wheat or whole grain breads are best. Whole wheat bread is great source of fiber, necessary for a healthy digestive tract, and is known to reduce LDL, or bad, cholesterol. Whole wheat bread also provides important nutrients like vitamins B and E, selenium, iron, magnesium and zinc and has properties that lower the risk of cancer, heart disease and diabetes.
The whole-fruit butters Tassleberry Farm produces are the result of a preserving process where the fruit is blended after being heated to give it a smoother butter-like consistency. A straight peanut butter & jelly sandwich is an American dietary staple, but many folks enjoy variations and additions to this old chestnut.
Some families add sliced bananas or marshmallow fluff. Others may use cheese, raisins or other fruits. Meat lovers pile on slices of bacon. Chocolate, plain butter, honey or maple syrup are also popular. There are some concoctions that employ hummus or potato chips.
Moms Tassleberry is a big Elvis fan and Elvis was a big fan of PB&J. Fried PB&Js. Moms keeps several of Elvis' favorite recipes aside for when company comes over, but she makes these only on special occasions.
That's because everyone knows what happened to Elvis. And, unlike a lot of folks, Moms knows The King's not in hiding. So, she says, you should use these recipes in moderation, but urges you to enjoy your own style of PB&J every day.

Tassleberry Farm means good food
Here's some Valentine's recipes for you

Moms Tassleberry's heart is filled with joy over her beloved Cheeseheads' Super success.
Little-by-little, she's been learning about football, so you know how this sort of romance goes...
She's a farm gal... Wisconsin's the Dairy State...
Smitten like the birds & the bees, they've made a true love connection. This Valentine's Day, Moms is hoping for a ring. Her own Super Bowl ring!
But, with The Big Game now come and gone, Moms won't be smelling the roses (OK, maybe a little sniff, here and there).
She knows Valentine's Day traditionally brings a night on the town. Flowers, fine food, violins, intimate conversation. Sounds great, but that can get real expensive, real fast.
So, with money tight all around, Moms has been in her kitchen, cooking up ways for you and yours to save money and celebrate Valentine's in style right at home.

10 to 12 slices of fried bacon or 1/2 jar of real bacon bits (vegetarian option below)

Moms is no stranger to love, but also no stranger to a broken heart. Once, but a lovestruck teen, a fickle beau left her for another.
Moms was crushed. When she asked why, he made himself a public spectacle, loudly claiming, “You don't deserve me! You’ll never have anyone like me again!”
"Right about then," says Moms, "I’m thinking, 'I hope not!' What a jerk!" Speaking of Jerk...

(To complete this recipe during wintertime, the chef will need an in-stove or portable electric kitchen counter grill.)

Ingredients
½ cup pineapple or orange juice (or combination) – use the juice from a large can of pineapple chunks
1½ pounds large EZ peel or Zipperback shrimp
½ cup Tassleberry Farms Strawberry Jerk
2 large green peppers
1 one red onion
Directions
Combine juice with jerk; marinate shrimp for 20 minutes. Do not marinate for more than 30 minutes! Use EZ peel shrimp because the slit down the back allows the flavors of a marinade to penetrate the shell but there is still enough shell to protect them from drying on the grill. Drain marinade. While the shrimp marinate, soak wooden skewers in water to prevent them catching fire on the grill.
While the shrimp marinate, cut 2 large green peppers and 1 red onion into bite size chunks. Thread shrimp and veggies onto skewers with chunks of pineapple. Grill over medium low heat until veggies are tender crisp and shrimp are pink and curled, about 8 minutes.
Optional: Omit the pineapple chunks if desired and use bottled juice or orange juice.

Moms always wears her heart on her sleeve. She likes what she likes and visa-versa. But one recipe she swears by is her vinegar pork chops. It shows off the versatility of her Balsamic Vinegar, using it as both a marinade and a finishing sauce. "That vinegar's a two-timer," chuckles Moms. "A real heart breaker."
Ingredients
4 boneless pork loin chops, about 3/4" thick
1/2 cup Tassleberry Farms Strawberry Balsamic Vinegar
2 tablespoons extra virgin olive oil
1 medium onion, slivered
1 large green pepper, sliced into thin strips
4 cups hot cooked buttered rice, to serve
Directions
Pierce pork chops all over with a fork or a toothpick. Cover pork chops with vinaigrette and marinate at least four hours, refrigerated. Drain marinade from chops and reserve.
In a large skillet, heat olive oil over medium high heat until hot but not smoking. Add pork chops so that they are not touching (do two at a time if necessary) and brown on all sides.
Add onions, peppers and reserved marinade. Cook three minutes, then lower heat to medium low, cover pan and continue cooking until veggies are tender and pork is cooked to 155 degrees.
Add a half cup of chicken stock if liquid cooks down too quickly.
Put a cup of cooked rice on each plate, top with a pork chop and spoon veggies and pan juices over the top.

Eat Our Berries, Fight Off Diseases
And Improve Your Overall Health

According to a consensus of physicians and dieticians, certain berries such as strawberries and blueberries are rich in antioxidants and disease-fighting phytochemicals which can prevent and even reverse serious diseases.
The Natural News says:
  • Edible plants and berries create healing phytochemicals that are precisely the compounds that your body needs to be healthy, and are available without the negative side effects that are frequently associated with prescription drugs.
  • Compared to other fruit sources, berries offer the highest content of antioxidants and phytochemicals for fighting disease. Berries are also rich in many vitamins and minerals, including calcium, magnesium and zinc - minerals that are frequently deficient in the diets of most Americans.
  • Blueberries are perhaps the most powerful in terms of antioxidant content: they are high in flavonoids and are known to help protect against prostate cancer, urinary tract infections and cataracts. They are also known to protect against brain damage from strokes and heart disease.
  • Strawberries are high in antioxidants and vitamin C. They are known to fight heart disease and provide a number of vitamins and minerals that support overall human health.
