Here she shares her simple, easy procedure for mouthwatering baby back pork ribs. The recipe utilizes the rich and tangy flavor of Tassleberry Farm Strawberry BBQ Sauce. Unlike many other brands, our sauce has no added sodium.

Strawberry Pork Ribs

Ingredients
6 1/2-pound pork baby back ribs
1 16-oz. btl Tassleberry Farm Strawberry BBQ Sauce

Directions
Place ribs in a large pot, cover with water and half the bottle (8 oz.) of Tassleberry Farm Strawberry BBQ Sauce. Bring to a boil and simmer for 40 minutes.
Remove from heat and either let stand until ready to barbecue or cook immediately.
Barbecue ribs 6 to 8 inches from coals for 15-20 minutes or until brown and crisp, basting frequently with BBQ sauce.
Serve with remaining sauce for dipping.

Walnut Spinach Salad

Ingredients
• 1 bag baby spinach leaves
• 2 cups fresh strawberries
• 1/4 cup walnuts
• 1/2 cup crumbled goat cheese
• 2 tbsp Tassleberry Farm Strawberry Balsamic Vinegar
• 1/2 cup olive oil
Directions

To purchase your Tassleberry Farm

Wash and hull fresh strawberries, removing stems and leaves, then chop up
Wash baby spinach leaves and place in bowl with cover
Pour in Tassleberry Farm Strawberry Balsamic Vinegar and olive oil. Cover bowl and vigorously toss
Add in fresh strawberries and walnuts. Cover again and gently toss
Top with crumbled goat cheese and serve

Optional - To spice up salad to taste, sprinkle in some black pepper, or a finely chopped clove of garlic, or some diced-up onion or scallions when adding in strawberries and walnuts. If fresh strawberries are unavailable, you may substitute well-defrosted frozen strawberries or two cans of Mandarin oranges

Ingredients
• 1 qt. fresh strawberries
• 2 tbsp Tassleberry Farm Strawberry Balsamic Vinegar
• 2 tspn sugar
Directions
Wash and hull fresh strawberries, removing stems and leaves, then slice in half
Place in bowl with cover
Drizzle 1 tbsp Tassleberry Farm Strawberry Balsamic Vinegar over strawberries
Sprinkle 1 tspn of sugar over top of strawberries
Cover bowl and gently but repeatedly toss to coat strawberries
Place bowl in refrigerator for about 30 minutes then serve
Optional - Lightly sprinkle with black pepper or garnish with mint sprigs

Ingredients
• 1 cup of elbow macaroni
• 12-oz. btl. of Tassleberry Farm Strawberry & Sweet Corn Salsa (mild or hot, to taste)
• 14.5 ounce can of un-drained whole tomatoes
• 1 cup shredded cheddar cheese
Directions
Cook macaroni as desired
Heat tomatoes and Tassleberry Farm Strawberry & Sweet Corn Salsa in a 2-quart pan, medium heat, breaking up tomatoes
Reduce heat to low and simmer uncovered 5 minutes
Stir in macaroni and add cheese
Cover and let stand 5 minutes

• 1 small chicken

Preheat oven to 350
Cut up a small chicken, bone in and remove skin
Arrange chicken pieces in a baking dish.

Bake for about 1 hour, removing foil for last 10 minutes

• 1 lamb roast
• 1 half-cup of onions, finely chopped
• 3 tbsps whole-fruit Tassleberry Farm Strawberry Butter
• 3 cloves of garlic, chopped into slivers
• 1 12-oz. btl. Tassleberry Farm Strawberry Marinade
• 1 cup sour cream
• 1 eighth-cup rosemary
Directions
After trimming excess fat, perforate roast all over with a paring knife and insert garlic slivers completely into holes
In large plastic sealable bag, combine Tassleberry Farm Strawberry Marinade and 3 tbsps of whole-fruit Tassleberry Farm Strawberry Butter with the chopped onion (you may add a half-cup of red cooking wine to this mix, but that is optional). Shake vigorously to blend mixture
Place roast in bag and put into refrigerator for 24 hours, turning occasionally to spread marinade
Remove roast in bag from refrigerator, let sit for approximately 30 minutes to give it chance to assume room temperature
Remove roast from bag and place in roasting pan
Split remaining marinade in half, scooping onions into one of the halves in reserve.
Place in oven preheated to 350, and cook for 25-30 minutes per pound to reach medium rare, the preferred temperature of most diners. Baste roast with reserved half of marinade with onions occasionally during cooking
As meat nears its optimal serving temp, reduce remaining marinade reserve by half in a sauce pan
Remove roast from oven
Combine sour cream with tbsps of reduced marinade, governing its viscosity, to form a drizzle.
Slice roast, drizzle mixture over platter, sprinkle on rosemary and serve.

Good Friday is a day of fasting: One full meal, although smaller than a regular meal, and two smaller meals, which together do not equal one full meal, are all Christian tradition allows. That and again, of course, no meat.

Ingredients
• 1 French baguette
• 1 10-oz. btl. Tassleberry Farm Strawberry Butter
• 1 small wheel of soft brie cheese.
Directions
Slice baguette lenghthwise and hollow out the middle slightly to provide a well for the cheese and whole-fruit butter to settle into.
Breaking the rind, scoop out brie and slather onto one side of the baguette. You may find that you must warm the brie slightly in the oven to facilitate this step.
On the other side of the baguette, liberally slather the Tassleberry Farm Strawberry Butter.
Fold the two sides together and place on cookie sheet.
Preheat over to 325. Slide in baking sheet and monitor until the cheese begins bubbling out the side, usually 20-25 minutes. Make sure not to burn bread, turning if necessary
Remove from oven, wrap in tinfoil to keep it warm.
The bread can be cut into section and reheated in a microwave for later consumption

Ingredients
• ¼ cup olive Oil
• 1 lb. scallops, sliced into quarters
• ½ cup onion, chopped
• 2 tbsp. Tassleberry Farm Blueberry Vinegar
• 1 btl. Tassleberry Farm Blueberry Butter
• Ground black pepper
• Chopped parsley
Directions
Heat the olive oil in large frying pan over a moderate high heat
Add scallops and saute until clear
Remove promptly, plate and cover with foil
In same pan, without draining, add in 1 btl. Tassleberry Farm Blueberry Butter, onions, Tassleberry Farm Blueberry Vinegar and black pepper. Reduce heat to medium and blend about 5 minutes
Spoon over scallops while hot. Top with parsley.
Serve immediately with rice and vegetable of your choice

1 btl. Tassleberry Farm Strawberry Marinade
• 1 lb. codfish
• 1 packet taco seasoning (or 1.25 ounce of home-mixed equivalent)
• Black olives, sliced
• 1 medium tomato, diced
• 1 cup lettuce, shredded
• Shredded Monterrey Jack cheese
• Sour cream
• 1 btl. Tassleberry Farm Strawberry and Sweet Corn Salsa
• 1 pkg. taco shells or tortillas
Directions
Place fish in large dish, coat with Tassleberry Farm Strawberry Marinade, cover and refrigerate for at least a half-hour
Take top rack from oven and cover center area with tinfoil. Place rack back in oven, slotted about 6 inches from broiler flame source
Preheat oven, broiler temp
Remove fish from dish, shaking off excess marinade. Sprinkle on taco seasoning mix to both sides and place on oven rack
Broil fish for 4 minutes a side or until it flakes with a fork
Remove fish from broiler and chop into smaller pieces. Cover with foil and set aside
Heat taco shells/tortillas according to directions
Place shredded lettuce into taco shell, add chopped fish then layer on tomatoes, olives, cheese and sour cream
Top with Tassleberry Farm Strawberry and Sweet Corn Salsa and serve

Preheat oven to 350
Slice fish into 4 quarters and position in baking dish with space between
Brush on Tassleberry Farm Strawberry Marinade on all sides
Place in oven and bake for 20-25 minutes, basting with marinade as needed. When done, fish should flake apart with a fork
Remove from oven, plate, then top with Tassleberry Farm Strawberry and Sweet Corn Salsa

Ingredients
  1 lb. swordfish steaks, boned, about 1 inch thick
1 10-oz. Btl. Tassleberry Farm Strawberry Jerk Sauce
Directions
Place steaks in shallow baking pan, with space between
Coat steaks in Tassleberry Farm Strawberry Jerk Marinade, turning to coat them all over
Cover and let stand for 30 minutes at room temperature, turning once
Preheat broiler and cover oven rack with tinfoil
Broil steaks 4 inches from heat for 8 minutes
Turn steaks, baste with some of remainder marinade from baking dish
Cook until fish flakes easily with fork (7-10 minutes)
Serve over rice with choice of vegetable
Optional: Garnish with parsley and lemon wedges

Directions
Place steaks in baking dish with space between, smother with Tassleberry Farm Strawberry Marinade
Cover and place in fridge for 3 hours. Turn steaks over at 1-1/2 hours
Take top rack from oven and cover center area with tinfoil. Place rack back in oven, slotted about 6 inches from broiler flame source
Preheat oven, broiler temp
Remove steaks from baking dish, shaking off excess marinade, and place on oven rack
Broil steaks about 3 minutes, turning once, until browned outside, pink inside. Intense heat! Do not let burn
